If you know me, I am always trying to find ways to enjoy my food while staying on the healthy side and counting my macros! That’s why, when I stumbled on this recipe on Pinterest, I had to try it immediately. I mean, who doesn’t love egg rolls?! This “egg roll in a bowl” recipe is not only low carb, but it’s delicious! Not to mention, this route is WAY easier than frying up some egg rolls. This recipe takes less than 20 minutes – hello, busy school nights!

It kind of reminds me of my Easy Sheet Pan Dinner recipe in that you basically just throw the ingredients together with very little prep. I live for dinner ideas like that! Also, anything you can throw in the crockpot like my Chicken Enchilada Soup is like, “hallelujah, thank you Jesus!” We have to save time anywhere we can these days with the kids back in school.

Low Carb Egg Roll Bowl
- 1 lb ground beef
- 6 cups coleslaw mix
- 4 cloves garlic
- 1 tbsp ginger
- 1/4 cup green onions
- 1 tbsp soy sauce
- 1 tbsp sesame oil
- Brown the ground beef and drain
- Add coleslaw mix, garlic, ginger, green onions, soy sauce, sesame oil
- Mix together and cook for about 3-4 minutes until coleslaw mix has softened
- Calories: 84
- Fat: 7g
- Carbs: 3.5g
- Protein: 2.8g
