With the temperatures rising, I have less of a desire to spend more than… ehh… 20 minutes preparing food in the kitchen. Anyone else feel the same way? I thought so! That’s why most of the go-to recipes I make in the summer are simple, fresh ingredients, and can be made right before lunch or dinner, without a ton of time involved. I think we all would rather be out in the sprinkler or pool with our littles than standing over a hot stove!
This chilled Chickpea Salad a regular part of my meal planning rotation, and once you try it, I have a feeling it will be a part of yours too! I’m all about no muss, no fuss “cooking” when I can be!
Today’s simple chickpea salad recipe is the first of many delicious salad recipes to come. Every Monday this month, I’ll be sharing a new salad recipe as part of a weekly summer salad series! Yum! Salads make easy lunch options and can be great for low carb day (depending on the recipe).
The simple addition of a protein makes this recipe a perfect dinner option too. Pair it with a grilled burger, wings, or chicken and you’ve whipped up a delicious dinner in a snap. I promise you can’t go wrong with this recipe. Easy to make when you’re in a pinch, and it makes a big statement. Everyone you know will be asking you for the recipe left and right. Yummy! Enjoy, friends!
