Happy National Coffee Day, friends! Today is the day we celebrate the cup of joe that gets us through the sleep-deprived days of motherhood and life in general! If you have been following me for very long, you know my passion for coffee. I drink at least 1 cup in the morning to kick start my day – typically paired with some type of milk or creamer. Today, I wanted to share a favorite paleo coffee recipe I have had on repeat!

Unless it’s a caffeine-deprived emergency, I typically stick to brewing my coffee at home. Those coffee shop trips add up QUICK! When I am making coffee at home, I love to brew Red Diamond. It tastes gourmet at an affordable price! I love a lighter blend and Eric’s go-to is the dark blend so we meet in the middle with Red Diamond’s medium roast. It’s all about compromise, right? 😉 We love a strong and full taste without it being too bold!

Ok ok, back to coffee… Another reason I love to make my coffee at home is to control what goes into my mug! So many lattes, cappuccinos, or other specialty drinks are packed with sugar and other ingredients that aren’t the best. When you are trying to maintain a healthy lifestyle, it can be tough to find a coffee shop that offers minimal sugar, dairy-free, or paleo coffee options! If you are sticking true to a Paleo or Whole30 diet, this can be near impossible.
I wanted to provide y’all with a super EASY, affordable, guilt-free, and delicious paleo coffee recipe to make at home. This is the perfect latte to make in the mornings, for an afternoon pick-me-up, or when a girlfriend comes over to catch up!
- 8 oz. freshly brewed Red Diamond Coffee
- 6 oz. full-fat canned coconut milk
- ⅛-1/4 tsp. cinnamon
- ⅛-1/4 tsp. vanilla bean powder
- sprinkle of salt
- Brew coffee
- Add all ingredients in a blender and blend for 30 seconds to 1 minute
- Pour into mugs
