And it’s a great option to bring to a neighborhood cookout or a friend’s backyard barbecue…hello, July 4th this weekend!
I’ve whipped up a delicious and EASY colorful salad recipe one of you shared with me on Instagram. It takes less than 15 minutes to toss together and I can’t get enough of the bright colors in this salad! It is clean eating approved, healthy, and delicious. The perfect way to start your week off right.
I love the simplicity of this salad because there is not a lot of prep work required which is also a win for me! If you meal prep as I do, a perfect use for this salad is to make a big batch and keep it in the fridge to enjoy for lunches that week. Or you can whip this up for dinner with some delicious chicken kabobs, steaks, or burgers on the grill. Yum! My mouth is watering.
15 Minute Colorful Salad Recipe:
- 1 cup of corn
- 1 cup of edamame
- 1 cup of red onion
- 1 cup of carrots
- 1 cup of diced celery
- 1/4 cup of extra virgin olive oil
- 1/4 cup of red wine vinegar
