I put this recipe on Instagram weeks ago and promised to share it and I’m finally getting around to it. (If you aren’t following me on Instagram yet, what are you waiting for?) So, if it looks familiar, that may be why!
- 1/3 cup unsalted dry roast peanuts
- 1.5 tablespoons garlic powder
- 1.5 teaspoons ginger
- .75lb boneless, skinless chicken breast
- 1 lime
|Preheat over to 375.|
|In a blender or food processor, grind peanuts until fine.|
|Combine peanuts, garlic powder and ginger in a small bowl.|
|Place chicken on a cookie sheet and squeeze juice from lime all over chicken.|
|Roll chicken in peanut mixture until well coated.|
|Bake chicken in oven for 25 minutes or until no longer pink in center.|
