Are you feeling a little sluggish and full after overeating this Memorial Day weekend like me? If so, I’ve whipped up a delicious and EASY colorful salad recipe that one of you shared with me on Instagram. It takes less than 15 minutes to toss together and I can’t get enough of the bright colors in this salad! It is clean eating approved, healthy and delicious. The perfect way to start your week off right.

I love the simplicity of this salad because there is not a lot of prep work required! I kept my carrots and celery in my FreshWorks containers to keep them crisp and fresh until it was time to mix the salad. I can tell a significant difference in the freshness of my produce! Game changer!

In honor of National Salad Month, I am sharing tons of salad recipes with you guys this month, so make sure you head over to this post that has MANY MORE SALAD RECIPES & IDEAS to help you have a healthy and delicious variety of lunches or dinners this week.
