Are you feeling a little sluggish and full after overeating this Memorial Day weekend like me? If so, I’ve whipped up a delicious and EASY colorful salad recipe that one of you shared with me on Instagram. It takes less than 15 minutes to toss together and I can’t get enough of the bright colors in this salad! It is clean eating approved, healthy and delicious. The perfect way to start your week off right.

I love the simplicity of this salad because there is not a lot of prep work required! I kept my carrots and celery in my FreshWorks containers to keep them crisp and fresh until it was time to mix the salad. I can tell a significant difference in the freshness of my produce! Game changer!

Colorful Salad
 
Ingredients
  • 1 can of corn
  • Frozen shelled Edamame
  • Finely chopped Red Onion
  • Chopped Carrots
  • Diced Celery
  • DRESSING:
  • EVOO
  • red wine vinegar
  • Sea Salt/Pepper if desired
Instructions
  1. This recipe is very flexible! Just chop and blend all ingredients, mix up your homemade salad dressing and toss to coat!
