15 Minute Asparagus Pasta
 
Ingredients
  • 1 box whole wheat penne pasta
  • 1 bunch fresh asparagus
  • 2 tablespoons olive oil
  • 1 bell pepper, chopped
  • 1 garlic clove, minced
  • 1 cup chicken broth
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • ¾ cup parmesan cheese
  • 4 tablespoons butter
Instructions
  1. Prepare pasta according to package directions; rinse and drain.
  2. Snap off tough ends of asparagus, and cut into thirds.
  3. Saute asparagus in a hot oil in a large skillet over medium heat for 4 minutes.
  4. Stir in red bell pepper and garlic; cook, stirring occasionally, 2 minutes.
  5. Stir in chicken broth. Bring to a boil.
  6. Reduce heat and simmer 2 minutes or until asparagus is crisp-tender.
  7. Stir in salt and pepper.
  8. Toss together pasta, asparagus mixture, parmesan cheese, and butter.
  9. Garnish with additional cheese and pecans, if desired.
