Oatmeal Dark Chocolate Chip Cookies

Ingredients
  • ½ cup plus 6 tablespoons butter, softened
  • ¾ c firmly packed brown sugar
  • ½ cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • ¾ c whole wheat flour
  • ¾ c all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 3 cups oats (quick or old fashioned, uncooked)
  • ½ cup dark chocolate chunks/chips
Instructions
  1. Heat oven to 350.
  2. In large bowl, beat butter and sugars on medium speed of electric mixer until creamy.
  3. Add eggs and vanilla; beat well.
  4. Add combined flours, baking soda and salt; mix well.
  5. Add oats and dark chocolate and mix thoroughly.
  6. Drop dough by rounded tablespoonfuls onto ungreased cookie sheets.
  7. Let sit in refrigerator for 2-3 hours or overnight.
  8. Bake 8-10 minutes until light golden brown. Coll one minute on cookie sheets; remove to wire rack to finish cooling.
