Lightened Up Cookies for Santa

  • 1½ cups oats*
  • 2 teaspoons cinnamon
  • ½ teaspoon salt
  • 1 large banana, mashed
  • ½ cup unsweetened applesauce**
  • 1 teaspoon vanilla
  • ⅓ cup chopped pecans
  • ⅓ cup shredded coconut
  • ⅓ cup semi-sweet or dairy-free chocolate chips
  • melted chocolate for drizzling, optional
  1. Preheat oven to 350 degrees.
  2. Line a baking sheet with parchment paper, or spray with non-stick cooking spray. Set aside.
  3. In a large bowl, combine oats, cinnamon, and salt.
  4. Add mashed banana, applesauce, and vanilla, and stir to combine.
  5. Stir in remaining ingredients until combined.
  6. Drop by spoonfuls onto prepared baking sheet.
  7. Press down each cookie gently with back of greased spoon or oiled hands to flatten.
  8. Bake 12-14 minutes, or until firm and golden brown.
  9. Drizzle with melted chocolate if using.
  10. Let cook 5 minutes before removing from baking sheet.
