10 Minute Fancy Green Beans with Goat Cheese

Ingredients
  • 1½ lb. green beans, washed and trimmed
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon sherry vinegar
  • ½ teaspoon sea salt
  • Ground black pepper to taste
  • ⅔ cup dried cranberries
  • 1 (4-ounce) log goat cheese, crumbled
  • Optional: ¼ cup almonds and/or cooked bacon (crumbled)
Instructions
  1. Bring a large pot of salted water to a boil.
  2. Add green beans and cook until just tender, 3 to 4 minutes.
  3. Drain well and transfer to a large bowl.
  4. Toss with oil, vinegar, salt and pepper and transfer to a large platter.
  5. Scatter cranberries, goat cheese and almonds over the top and serve warm.
