10 Minute Fancy Green Beans with Goat Cheese

- 1½ lb. green beans, washed and trimmed
- 2 tablespoons extra-virgin olive oil
- 1 tablespoon sherry vinegar
- ½ teaspoon sea salt
- Ground black pepper to taste
- ⅔ cup dried cranberries
- 1 (4-ounce) log goat cheese, crumbled
- Optional: ¼ cup almonds and/or cooked bacon (crumbled)
- Bring a large pot of salted water to a boil.
- Add green beans and cook until just tender, 3 to 4 minutes.
- Drain well and transfer to a large bowl.
- Toss with oil, vinegar, salt and pepper and transfer to a large platter.
- Scatter cranberries, goat cheese and almonds over the top and serve warm.
